This is by far the best broccoli cheese soup I have ever had.
In your pot saute 1 finely chopped red onion in aprox 2 tbs of butter continue until golden add 4 cans chicken stock and 2 packages broccoli florets simmer aprox 15 min. Add 1 cubed box of valveta cheese. make sure at this point that the soup does not boil!!!!!! This will cause the cheese to break down and make your soup unattractive and loose some tast. next simmer aprox 5 to 10 minutes so that flavors can join. finish with a dash of pepper and your done. If you choose you can also add some thyme at the beginning while you saute your onion, however the soup is wonderful with out. Hope you enjoy. This recipe is a favorite at home and at the house.

4 cans chicken stock
1 red onion
butter
pepper (dash)
2 packages broccoli
1 package velveta 32oz
