Brother, I have been cooking Tater Tot Casserole in a variety of ways for a long time around the firehouse. The lastest favorite seems to be the following recipe. We do it for Sunday breakfast or for dinner just depends on the crews mood. This feeds a crew of 4-6 and our Battalion Chief.
1 bag tater tots
2 lbs. spicy or hot ground sausage
2-3 cans 15 oz. cream of mushroom soup (depends on your desire of thickness)
1 small yellow onion (if your crew likes onions)
1 large bag of shredded sharp cheddar cheese
Brown the sausage and mix in chopped onion. Drain and place into casserole dish. Add soup and mix well with the sausage. We place our tater tots in rows neatly for even cooking. Once the tots are done, cover with shredded cheese. Cook til melts and remove before the cheese gets too hard. Allow to cool and for at least 10 min so the casserole will thicken. Now here comes the good part. We like to fry and egg or 2 and lay it on the top when served. Warning will put the crew to bed immediately so get the kitchen cleaned in a hurry. Enjoy!
