Are there any new products out there I should be using for my remodel to help prevent fire?

Evelyn, I would strongly suggest sprinklers! as part of the re-model!
I agree with Mr Halton about the sprinklers, I strongly suggest wired smoke detectors and I have always felt that it was a good idea to plum in a garden hose with a length of 10 to 20 ft under the kitchen and bathroom sink.
Get a FIT 5 (http://www.arasafety.com/) and leave it where you can fire it up and leave the house.

If you are going to install sprinklers, put in an FDC (Fire Department Connection) at the front of the house and a strobe over it so the fire engine can attach a line and supply more water to the sprinkler system if it is flowing.
I had never heard of the fit 5 before. I just checked out the video, Im sold......... That is cool! I think im gonna get one for my house, only problem I cant find how much they are. Thank you for opening my eyes to this.

No probs. When I found out about them, I suggested getting a few for the town police. One window busted in would be a small price for 15 minutes of extra time we would get from reduced fire progression.
